Updated: May 6, 2019

I know what you are thinking; what is a gremolata and what is this dish because it looks awesome and should be in my mouth. Well, maybe those are just my thoughts. But in case you are thinking the same, keep reading!

Gremolata (or gremolada) is an Italian sauce or condiment made of lemon zest/juice, fresh garlic, parsley and anchovy. It can be made with just the zest of a lemon or the juice as well. It is often served as a garnish, but can be used in everything ranging from vegetables, fish, tossed with grains or accompanying veal shanks in the traditional ossobuco alla milanese. Light, easy to make and a wonderful fresh flavor, this sauce is perfezionare!

Apart from tasting amazing, quinoa is a complete protein containing all nine essential amino acids, is rich in magnesium, iron, lysine, manganese, riboflavin and contains almost twice as much fiber as most other grains. These patties back a healthy punch!

When making this dish, use fresh, organic ingredients to get the best flavor possible. If you want to swap out the vegetables with seasonal local produce, go for it!
