Beef Phở (Noodle Soup!)

Otherwise known as Phở Bò, this is the classic beef phở that you are probably used to seeing at Vietnamese restaurants. Phở is a delicate noodle soup the has a beautiful depth of flavor from a well crafted stock. This recipe takes some time, but most of the it is passive cooking time.
When making this, start with quality ingredients. Make sure the beef is a high quality, happy cow. In traditional Vietnamese cuisine, they use pasture-raised cattle. Also using fresh, organic produce helps impart the most richness into your stock and finished soup.
